Cod and scalloped potatoes casserole (zapekanka iz ribi i kartoshki)

It’s well known that potatoes are a staple ingredient in Soviet cooking. I’ve tried to stay away from too many stereotypical meals here on Russian Bites in an attempt to teach both you and me something new about the food in this region of the world. But let’s face it – potatoes are delicious and it’s a bit silly to try to avoid them all together.

I had some frozen wild cod defrosting in the fridge today and decided to browse my trusty Please to the Table cookbook for some recipes. Somehow (and this never happens!) I had all the ingredients to make this cod and scalloped potatoes dish so I got straight to work. The result was a hearty dish that… sounded better than it tasted. Actually it was “not bad” … but I typically aim higher. Perhaps just a few more generous helpings of salt would have elevated the dish for me. As it was, I thought it was a bit bland. Sad smile My husband disagreed with me and gobbled up almost half of the pie and said he’ll happily finish the rest of it over the next two meals. So with that, I share the recipe with you. Not all of them can be winners but who knows, maybe this will be right up your alley after all!

Ingredients (serves 4-8):

  • 4 large baking potatoes (about 1.5lbs)
  • 4T butter, divided
  • 1lb cod (or another firm white fish)
  • 1/2 cup flour
  • 10oz mushrooms
  • 1/4 cup breadcrumbs
  • 2 eggs
  • 1 cup half and half
  • 3/4t paprika
  • salt, pepper and dried dill to taste

0. Preheat oven to 350*

1. Boil potatoes, until tender (but not falling apart) – about 25 minutes

2. Cut fish into 1” cubes

3. Roll in flour

4. Melt 2T butter on medium heat, fry fish until lightly brown

5. In the meantime… chop mushrooms

… and fry with 1T butter over medium heat

6. Once potatoes are soft, cut into 1/4” rounds

Time to assemble the casserole! Open-mouthed smile

7. In a 9” round pan (or pie dish), layer 3/4 of potatoes

Sprinkle with salt, pepper, dried dill and 1/4 teaspoon of paprika

then mushrooms… salt, pepper + 1/4 teaspoon of paprika again

Next up – fish

… and the remaining potatoes

8. Whisk eggs and half&half

9. Pour mixture over the potatoes

10. Sprinkle with bread crumbs, salt, pepper and remaining 1/4t paprika

11. Cut 1T butter into little squares and layer over potatoes

12. Bake at 350* for about 30 minutes – until potatoes are golden brown and the cream/egg mixture hardens
